    Mashed Potato Substitute

I'm not one to purposefully overcook vegetables but for this receipe its needed, probably will kill anything of value within the veges but wont contain as much carbs as mashed spud.Smile

All you need is to boil or steam cauliflower and/or cabbage until really soft.

Add salt and pepper and MASH.

Additionally you can add butter and milk if you make you make your mash that way, however it wont be as healthySurprise

    Re: Mashed Potato Substitute

................never thought of cauliflower or cabbage as a potatoe substitute.  I will have to add them to our list.  Up until now we have just replaced it with sweet potato.
