    "Pritikin" muffins

    I've just finished baking a dozen of the Sultana and bran muffins from Ray's Training Diary meal planner (they smell fabulous too Ray - I can't wait for breakfast tomorrow!) I thought I'd share a recipe I've used in the past for Pritikin muffins - unfortunately I'm not entirely sure on the fat content etc. based on their content they've got to be pretty good.

    For those not aware - Pritikin muffins are named after Nathan Pritikin who survived cancer in the early eighties through a diet that cut out all fat and sugar.

     
    Ingredients (Makes 12)

    4 Egg Whites
    3/4 Cup Skim Milk
    1/2 Cup Non fat yoghurt
    1/4 Cup Apple Juice
    2 Apples - peeled & chopped
    1 lemon (rind of)
    1 Cup drained sour cherries
    1/2 cup Sultanas
    1 1/2 cups wholemeal flour
    1 Cup Rolled Oats
    1 Cup Oat bran
    3 teaspoons baking powder
    1 1/2 teaspoons cinnamon

    Method

    Preheat oven to 180 degrees C

    Thoroughly beat egg whites, milk, yoghurt & apple juice

     Mix in apples, lemon rind, cherries & sultanas.

    Combine all dry ingredients (flour, rolled oats, oat bran, baking powder, cinnamon and fold these into the wet mix.

    Bake for 25-30 mins

     I love my muffins too.. i got the following recipe from www.calorieking.com.au  I add bacon pieces to mine and they are delicious!

     

    Sweet corn and chive muffins

    Ingredients:

    1 1/4 cup flour, self-raising

    1/2 tsp cayenne pepper

    1/4 cup buttermilk

    1 egg white

    1/4 cup skim milk

    1 Tbsp sugar substitute

    2 Tbsp chives, chopped

    1 cup corn kernels

    1/2 cup cheese, low-fat, grated

     

    Directions:

    1. Preheat oven to 200*c.

    2. Lightly grease a muffin pan with cooking spray.

    3. Sift together flour and cayenne pepper into a large mixing bowl. In another mixing bowl combine the buttermilk, sugar, egg white, milk, chives, corn and cheese.

    4. Add the dry ingredients and stir until mixed.

    5. Spoon into the muffin pan and bake for 15 - 20 minutes or until the muffins spring back when lightly pressed.

    6. Cool on a wire rack.

    Variations:

    Try using other vegetables instead of corn for a healthy alternative to sweet muffins.
