150g long gain rice
2 cups hot water
1 egg, beaten
1 tbs parsley
salt and pepper
1/2 cup each of grated zuchinni, pumpkin and diced broccoli and red capsicum
20 g plain flour
2 eggs, extra
1 cup skim milk
60g grated light cheese
Preheat oven to 180 degrees
Place rice and water in micro proof bowl, micro on high for 15 minutes. let sand 5 mins.
Beat 1 egg, parsley, salt and pepper into the rice with a fork, press into base and sides of pie plate (if doubling recipe, use lasagne dish) Put veggies on top, bake for 30 minutes.
Whisk extra eggs into flour until smooth, mix in milk and salt and pepper. Pour over veggies, sprinkle with cheese. and put back in the oven for 45 minutes.
