Mango, Nectarine & Lamb Salad.
lamb backstrap ( cut in half - 1/2 per adult ), pan fry in touch of oil ( your choice ) till cooked to liking. Leave to cool. Thinly slice.
mixed lettuce, english spinach, dandelion leaves, snowpea sprouts, ( spanish onion, nectarines, mango - these sliced ). All arranged onto plate or bowl. Top with cold lamb.
Dressing - 1 cup natural yogurt, 1/4 cup orange juice, 1/2 cup fresh chopped mint, 1 tsp each of ground coriander & ground cummin. Dry fry the coriander & cummin for 1 minute. Mix all the ingrediants and pour over salad. Toss - if you want, and serve. ( the dressing recipe is enough for 4 ).
