    dinner - spicy thai mock chicken and swiss mushrooms vermicelli noodle salad


    A very refreshing salad that goes well with the fried tofu and would be a lovely addition for summer salads!  I added some slivered almonds through the mix also, you could add peanuts instead.


    The thing on top is the fried tofu, which is also on here.


    Serves:

    • 4

    Calories:

    Minus mock chicken, due to varying sorts:

    • total - 328 calories for what is calculated
    • per serve - 82 calories

    Ingredients and calorie count:

    • 250 gram packet vermicelli noodles - (238 calories)
    • 1 cup swiss mushrooms, sliced thinly (26 calories)
    • mock chicken (not added to calories, as various sorts)
    • fresh coriander (5 calories)
    • 2 x shallots/spring onions (10 calories)
    • 1 tsp ginger (9 calories)
    • spray extra virgin olive oil (13 calories)
    • 2 tbs rice wine vinegar (none)
    • 1 tsp garlic (4 calories)
    • pinch salt
    • pinch sugar (16 calories)
    • ground chilli paste 1 tsp or to taste
    • water to mix sauce with
    • 1/2 lime, juiced (7 calories)

    Tips:

    • use real chicken if you are not vegetarian!
    • add some nuts - almonds, cashews or peanuts

    How to cook:

    1. Spray pan with oil.
    2. Add ginger, a little of the vinegar, garlic, 1/2 of shallots, 1/2 of coriander and chillli and cook until fragrant.
    3. Add mushrooms and chicken, cook until brown.
    4. Boil water and place in bowl with noodles. Drain when cooked through.
    5. In large bowl, add noodles and cooked food and mix thoroughly.
    6. Add remaining shallots and coriander, mix thoroughly.
    7. Mix garlic, chilli, lime juice, vinegar, sugar and salt together in small bowl.
    8. Add water to sauce and stir thoroughly. Stir through noodle salad.
