any good ideas on different ways to cook eggplant?
I don't have any recipes handy but if you do fry it, just use a light spray of oil initially and don't keep adding more as the eggplant just keeps soaking it up!

I like it sliced, and baked with red capsicum, tomato, rocket lettuce & haloumi cheese, all allowed to chill so its served like a salad.
Damned if I could make it though
