    Christmas Breakfast Ideas...help!!

    Hiya,

    On Christmas morning, we have an informal breakfast with friends & neighbours dropping in before we all head off for the family lunches & so on.

    I was hoping people might have some ideas for simple recipes to make for Christmas breakfast.

    funny you should mention this...I found this book last night on Healthy Food - Breakfasts and Brunches...there are tons of ideas! I can certainly bring it for you to look at and copy some recipes?

     

    I started making some myself...

    Christmas brekky in our household is hoppers with Eggs...this is a sri lankan brekky.  It's delish! And I always look forward to it.

    Fruit salads and crossionts and jam or savoury fillings erm freshly made bread if you have a bread maker... ~thinks of all the things i want but cant have~Lust

    i was thinking of doing up a yummy fruit platter, and baking some nice things, as well as possibly grilled tomatoes, bacon & eggs for those who eat it, or maybe some kind of quichey/fritatta... not sure yet, just putting together some ideas... i need to have a practice run of whatever i decide on that's a bit more out of the ordinary Wink

    have you seen the frittata recipe I concocted?  It's really good, just ate them today as well and they're just as good afew days afterwards.

    I cna only give unhealthy ideas.  Apart from our healthy fruit platter (mangoes, stone fruit etc) we have croissants, scrambled eggs, bacon......drool.....and the croissants usually get chocolate shoved in them while they're warm......... better stop now, I want someZip it!

    Christmas Morning Wifesaver goes down well- it's a Canadian thing.

     You cut the crusts off bread and line a casserole dish with the bread. Then you cover the bread with bacon/ham & cheese and more bread.  Then you pour this egg mix- mostly eggs & herbs over the whole thing and leave it in the fridge overnight.  Then you put crushed cornflakes on top before you bake it.  It's really really yum.  It turns out looking like a slice thing- you can cut it up like finger food.

    Hey Kaz,

    mini quiches are a good idea - you could do them yourself and do an assortment of fillings.

    muffins are nice and you could have an assortment of sweet and savoury, did you ever make those corn cheese and bacon ones at school?

    english muffin grills - once again an assortment (gotta love assortments - they can suit all tastes) anything from smoked salmon or tuna on an already toasted muffin to ham cheese & tom all grilled together.

    definately agree with fresh fruit ! you could go christmassy (is that how you spell it?) with wedges of watermelon and honeydue or champagne - whichever one's green, can't remember!

    and how nice does fruit toast and cinamon toast smell ! so simple and so yummy.

    I have a couple of books at home with recipe ideas for some of the above if you'd like me to have a look Kaz. I hope this helps!

    French toast with bacon & maple syrup.. can you tell I may be aqcuiring some Canadian inlaws? You can cook french toast on the BBQ if it's too hot to cook inside.

    The fruit platter sounds like an excellent idea. I'll be having bacon and asparagus and creamy mushroom sauce (garlic if you like it, brown the mushrooms, add chopped parsley and lemon juice, a spoonful of cream, stir well).

    OK, I know I'll probably get shouted down here, but Kaz, why wouldn't you take this opportunity to show your neighbours and friends how they can enjoy a great Christmas breakfast and still eat healthy. I would TOTALLY ignore the croissants (do you know how much fat is in just one croissant?????). I would stick with the fruit platter; scrambled eggs (beat up some eggs, add some garlic and herbs and cook - very little fat in that), fat free bacon, soy and linseed toast with vegemite and jams, maybe even a cold vegetable stirfry (cooked with NO fat of course). This way you can help to educate your neighbours and friends as to what we've been all about all year without them feeling like you are preaching to them.

     

    Just my two cents.

    Hello,

    How about making some mini meringue's (think thats how you spell it). But when you make them use half normal sugar and half splenda to keep the cals down a bit. Then fill them with strawberries, blueberries and raspberries and top with low fat vanilla yoghurt..... YUM

    or you could have them as a dessert!!!
